5 Minute Turmeric Tofu Scramble

Tofu Turmeric Scramble

This delicious turmeric tofu scramble is one of my favourites and a great way to start the morning. Tofu is packed with protein and isoflavones that have consistently shown protective properties for both breast and prostate health. With the added benefits of organic turmeric, you’ll be so glad you added this to your weekly meal schedule. I highly recommend adding in some sour dough spelt toast with smashed avocado.

Ingredients:

  • 400g organic firm tofu
  • 2 tablespoons nutritional yeast (optional)
  • 1 teaspoon organic turmeric powder
  • pinch of cayenne pepper (add more if you like it spicy)
  • freshly ground black pepper
  • 1/2 teaspoon fine Celtic sea salt
  • 2 tablespoons non-dairy milk or Veganaise
  • grape seed or olive oil for cooking

Add ins:

  • bunch of baby spinach
  • cherry tomatoes
  • avocado toast

Method

NOTE: if serving cherry tomatoes along with this recipe, prepare those separately in another pan and just cook over a bit of oil or roast in the oven.

  1. Drain the tofu from the water and break the tofu into small crumbs (you can slice the tofu into chunks first, put into a bowl and press with a fork to get smaller crumbs)
  2. Add the nutritional yeast, organic turmeric, pepper, salt and milk and stir well
  3. Heat a medium non-stick skillet over medium-high heat and add oil (use a cast iron pan if you have one)
  4. Add the tofu into the pan and cook for about 3-4 minutes stirring occasionally
  5. Add the baby spinach and cover with a lid to allow the heat to steam the spinach. Turn the heat off when you do this and uncover and stir a couple times more
  6. Serve hot with cherry tomatoes and avocado toast (red peppers or other veggies also work great, but tomatoes are much quicker to cook and the focus here is 5 minutes!) 🙂
